RECIPE: “Ranch” Dressing: Plant-Based Healthy Alternative
Looking for a healthy salad dressing that will blow your mind (it tastes better than regular ranch and is good for you)! Try our delicious dressing on your salads, wraps or use as a dip. We seriously put this dressing on everything...guilt-free and soooo delicious!
This recipe is loaded with cashews, lemon and fresh dill.
Cashews are low in sugar and rich in fiber, heart-healthy fats, and plant protein. They're also a good source of copper, magnesium, and manganese — nutrients important for energy production, brain health, immunity, skin, hair and bone health. One serving (about a fistful of nuts) a day does a lot towards keeping us mentally and physically healthy.
Dill is packed with flavonoids, which have been shown to help reduce the risk of heart disease and stroke. But that’s not the only reason dill is thought to improve heart health. Research also shows that dill can also reduce LDL cholesterol levels. Plus dill is a good source of Vitamin A, Vitamin C, Calcium and Iron.
Lemons are a good source of vitamin C, help control weight, prevent kidney stones, reduce cancer risk and improve digestive health are a very healthy fruit. Plus they have a distinct pleasant taste and smell that make them a great addition to foods and drinks.
INGREDIENTS:
½ cup water
1 1/2 cups fresh lemon juice
2 cups cashews (soaked)
1 bunch green onions
2 teaspoons apple cider vinegar
2 cups FRESH Dill (2-3 bunches)
2 tablespoons onion powder
4 cloves garlic
2 tablespoons DRIED Parsley
2 teaspoon salt
Directions:
Soak cashews overnight (or for at least 4 hours)
Strain water from cashews and put cashews in blender
Put remainder of ingredients in blender
Blend on high for a few minutes or until creamy
Put extra in airtight container and store in the refrigerator (we love to use amazon jars)
*Side note the next day the dressing will be even better. Hard to believe as it is already so tasty right out of the blender. Let the flavors marinate together overnight and enjoy all over again.
**Dressing will keep for about 4-5 days, but I am sure it will be long gone before that.
***This recipe will fill 2 big mason jars. You can make less by halving the recipe OR make more by doubling it.
